Below are my personal tips for each brew method — the same foundation I use when teaching baristas and home brewers across New Zealand and Australia.

Whole Beans – Freshness Starts Here


Whole beans are where all great coffee begins. Grind only what you need — ideally right before brewing. Freshly ground coffee releases beautiful aromatics that disappear within minutes, so timing matters. If you can, invest in a burr grinder for consistent results.

Quick tip: Store your beans in an airtight container, away from light and heat. Avoid the fridge — moisture ruins flavour.

Filter Coffee


Filter coffee highlights the bean’s natural sweetness and delicate aromatics. It’s perfect for single origins and lighter roasts — where you can really taste the region and processing style.

How to brew (V60 or cone filter):

  • 15 g coffee (medium grind)
  • 250 ml water at 92–94 °C
  • Bloom with 30 ml water for 30 seconds, then pour slowly in circles
  • Total brew time: around 2½–3 minutes

Flavour goal: Clean, bright, and balanced.

Recommended roasts: Brazil, Blue Mountain Style, Blue Mountain Style Reserve



Plunger / French Press


Plunger coffee gives you body and depth — ideal for those who love a full, round mouthfeel. It’s forgiving and consistent, great for beginners and morning brews alike.

How to brew:

  • 18 g coffee (coarse grind)
  • 300 ml water just off the boil (≈ 94 °C)
  • Stir, steep 4 minutes, plunge gently
  • Serve immediately to avoid over-extraction

Flavour goal: Bold, smooth, and rich.

Recommended roasts: Brazil, Blue Mountain Style, Four Amigos, Mr.Tob

Moccamaster / Drip Brewer


A Moccamaster delivers clean, consistent filter coffee at the touch of a button. It’s perfect when brewing for family, staff, or a busy morning — and it stays faithful to the bean’s character when used right.

How to brew:

  • Medium grind (slightly finer than plunger)
  • 60 g coffee per 1 litre of water
  • Use filtered water if possible
  • Let the coffee rest 2 minutes before pouring

Flavour goal: Smooth, balanced cup with sweet aromatics.

Recommended roasts: Sweet Bianco, Apollo, Tob Star.

Stovetop / Moka Pot

<p>The stovetop brewer is a classic Italian method that delivers strong, aromatic coffee. It’s not quite espresso, but it captures the same intensity with a little less pressure and a lot more charm.

How to brew:

  • Fine grind (slightly coarser than espresso)
  • Fill the bottom chamber with hot water (to the valve)
  • Add coffee loosely to the basket — no tamping
  • Brew on low heat; remove from flame once it starts to gurgle

Flavour goal: Intense, chocolatey, slightly syrupy.

Recommended roasts: Mr. Tob, Tob Secret, Espresso Lover Reserve.

Espresso Machine


Espresso is all about precision. Small changes in grind or dose make a big difference, so take notes as you go. When done right, it’s rich, balanced, and naturally sweet — the foundation for every great flat white or piccolo.

How to brew:

  • 20g finely ground coffee
  • 40g espresso out (1:2 ratio)
  • 25–30 seconds extraction time
  • 93 °C brew temperature

Flavour goal: Balanced acidity, dense sweetness, silky body.
